How to Pickle Vegetables

This quick method of pickling is great for extending the life of those veggies sitting in your crisper and best of all, it can be applied to almost every type of vegetable.

To prepare your vegetables for pickling, follow the steps below:

  • Thinly slice vegetables like cucumbers, squash, red onion and cauliflower
  • Cut into spears vegetables like carrots or cucumbers
  • Peel vegetables like carrots
  • Blanch vegetables like green beans

To prepare your brine (the liquid the vegetables will pickle in) you will need the following ingredients:

  • Vinegar - I typically use white vinegar but you can use apple cider, white wine vinegar or rice vinegar (make sure you don't use aged vinegar like balsamic)
  • In terms of seasoning, you can add pretty much any spice in that you think would work, but personally I just add some garlic flakes, salt and pepper

Instructions:

  1. Prepare the jars - Wash however many jars you are going to use making sure to get the lids and rings with warm soapy water. Set aside to dry and just before use dab with a dry paper towell
  2. Prepare the vegetables - Wash and dry the vegetables then depending on your preference cut them as above
  3. Add the flavourings - put the vegetables into the jars
