Chilli pork ribs recipe

Ingredients

  • 1kg of pork spareribs
  • 125g of tin pureed tomatoes
  • 2 tablespoons of honey
  • 2 tablespoons of chilli sauce
  • 2 tablespoons of hoisin sauce
  • 2 tablespoons of lime juice
  • 2 garlic cloves, crushed
  • 1 tablespoon of oil

Method

  1. Cut each rib into thirds, then lay them in a single layer in a shallow non-metallic dish
  2. Mix together all the ingredients except the oil and pour over the meat, turning to coat well
  3. Cover with plastic wrap and refrigerate overnight, turning occasionally
  4. Drain the ribs, reserving the marinade and cook them over medium heat on a lightly oiled barbecue grill or flat plate
  5. Baste often with the marinade and cook for 15-20 minutes, or until the ribs are tender and well browned, turning occasionally
  6. Season to taste and serve immediately
  7. (Serves 4-6)
